Several weeks ago, one of the items on the pickup was 2 sprigs of basil. Not enough to make pesto, the question became how to best use it. There are the obvious answers, such as garnish on pasta or soup, but the most creative use from a conversation with my friend Cathy, who sampled the combination below at the Rhinebeck Farmers' Market.
The original only used plums but I adopted it to match the fruit in our last distribution. I, somewhat uncreatively, call it:
Plum/Apricot, Corn, and Thai Mint Medley
- 8-9 plums and apricots diced
- fresh cut corn 2-3 from cob
- Leaves from 2 sprigs of Thai basil
